Our Chefs

Tim D’Souza

Tim has held the position of Chef at some of Toronto’s top restaurants, private clubs and hotels. Prior to that, Tim trained at the esteemed Palazzo Della Fonte in Fiuggi, Italy and at the legendary Connaught Hotel in Mayfair, London, England. Prior to joining Brescia, Tim was Executive Chef at the Idlewyld Inn.


Martin Platt

Martin graduated from Yeovil College in England, completing his apprenticeship and receiving a diploma in Cater and Hospitality. He has over 16 years of restaurant experience in England and here in London, Ontario.  He was most recently Sous Chef at the esteemed Red Tail Gold and Country Club and has held senior positions at the London Hunt Club, The Hilton, and the Sheraton Four Points.
